The Tilapia King

I have written many times about my non-interest in cooking. When I was living alone, that was a tremendous problem as I could list on one hand the items I could successfully put on the table: spaghetti, meatloaf, tacos, Greek salad, hotdogs. That’s about it. When I met Dimitris, one of the first things I asked him was, “Are you a cook?” His response was “Oxi” (no, in Greek). Since we have been living together, we have alternated meal responsibilities. One of my responsibilities has been microwaving the TV dinners. Whichever one of us prepares the meal, the other prays over it before we dine. One meal that has become a particular favorite is tilapia, and Dimitris is the “Tilapia King.” He prepares it, adds a dash of this and that, and it is always delicious and precisely baked. I don’t know whether or not tilapia is as healthy as salmon, but it is certainly our fish of choice most of the time. By the way, when Dimitris does the tilapia, I choose the vegetable so that I feel I too am contributing.
